Oil in water emulsion: An oil-in-water emulsion is one in which oil serves as the dispersed phase and water serves as the dispersion medium (continuous phase). A good example of an oil-in-water emulsion is milk. Liquid fat globules in milk are distributed in water. Other examples are disappearing cream and others.
