Role of tartaric acid in baking powder (mixture of tartaric acid and sodium hydrogencarbonate) is to neutralise sodium carbonate formed upon heating sodium hydrogencarbonate.In case it is not done, cake will be better and sodium carbonate will also have injurious side effects.
