How does bile help in the digestion of fats?
The bile juices aid in the digestion process by emulsifying the fat into small molecules. The liver secretes about 500 to 1000ml bile per day. Bile juices contain some salts that act as modern detergents and reduce the surface tension of lipids in the chyme and emulsify the fat and oil or breakdown the large fat droplets into smaller ones. The emulsion of bile salt with the fat droplets prevents the fusion of fat droplets and enhances the breakdown into small molecules.
