Soaps are sodium salt of long chain fatty acids with hydrophobic covalent tail and hydrophilic charged end. Soap molecules form micelle around the oil droplet in such a way that hydrophobic covalent part of stearate Ions is inside the oil or grease droplet on cloth and hydrophilic charged end projects out of the oil or grease droplet, when some force is applied these oil or grease droplets are pulled into water by stearate ions and removed from dirty surface.
