Pure caffeine (trimethylxanthine) occurs as a white powder or as silky needles, which melt at 238 °C (460 °F); it sublimes at 178 °C (352 °F) at atmospheric pressure. It is very soluble in hot water; upon cooling, the solution deposits crystals of caffeine monohydrate.
